None of the Super FX chip games have had any kind of emulation based rerelease.
There was the GBA version of Yoshi's Island, but that was a full port that didn't reuse any of the Super FX2 code (and whilst a competant port, the SNES version is better), and that has been the basis for all other rereleases (like the 3DS Ambassador version, and Wii U VC release), but whether it was a technical hurdle or licensing issues with the chip design, they've never emulated it until now.
To the best of my knowledge, none of the other Super FX or Super FX 2 games have been emulated officially elsewhere.
Interestingly enough, the SNES mini has a hidden option to overclock the emulated Super FX chip, which will smooth off the framerate of games like Starfox/Starfox 2. It's not a massive difference, but I don't believe this feature is available on any other emulator (and it should also improve performance in other games like DOOM and Stunt Race FX).
Really though this should just get a full standalone release, and they should do the entire game.
