Victorinox also make cheap knives that aren't professional quality. Like I said, there's nothing wrong with getting cheap knives, but you won't be able to resharpen them.

Well that description came under the knives I ordered. So they are carbon tempered steel.

The handles are cheap. They're not full tang and they're moulded. But the blades are bloody awesome.

Oddly enough most of the 'how dare you invade our special place with your stupidity' merchants have fucked off and FX23 is still there along with the rest of us. Please note: FX23 has an 'online personality' that belies his actual wit, intelligence and comic timing. Five years ago YY was very much hallowed ground for some people and despite being a happy member of that forum for many years I delighted in seeing some of the more self important members wound up to fuck.

Hello people. I'm loathe to bump this thread for a simple opinion, but hey.

I want some knives. I have £140 in John Lewis vouchers for said knives. There is nothing that John Lewis sell, or are likely to sell in the future, that is likely to be of any interest to me now, or at any time in the future. So it is lucky that I want some knives. The knives will be acquired from John Lewis.

I also have money. I have three choices.
Global. The Rolls Royce choice with the price to match.
Robert Welch. I have never heard of these.Apparently John Torode helped design them. This concerns me greatly.
Raymond Blanc by Anolon. They look nice. But feel too cheap, and that if you take the 'Blanc' premium from the price, you may be left with not a lot. On the flipside, Analon make fucking great pans (and I actually have the top range that Raymond Blanc has since put his name to).

I've never owned anything approaching a decent knife before. I'm minded to bite the bullet on Blanc as I may struggle to see the difference between the 'great' knives and it would therefore be a vanity purchase. Also, may move away from a Block and buy individual knives. Is there anything missing in my logic?

Knives.
I bought a set of six Global knives about 5 years ago, use them every day and hone them every so often, really superb can't fault them.
In all honesty I only really use the 20cm cooks knife and 14cm Veg chopper on a regular basis.

Also bought a 28cm heavy as hell Cuisinox saute pan at the same time, pricey like the knives but turned out to be a great investment.
Based on the Anolon pans which I also have, I can't see you going far wrong there.
Pretty much three months and they are still as sharp as the day I got them.

Well worth the money then :)

Really? I thought you'd slate the concept of buying knives from a pan maker. Price is certainly dragging me there though, and gives me spare vouchers for a saute pan.
Nah - the pans are good quality, so I'd trust the knives to be the same.
Right. So I can't buy knives online in case I'm underage and am buying them to chib someone. Because, as a vengeful 15 year old social delinquent acting in a fit of bloodlust, my first choice for blades would be a Raymond Blanc by Analon knife set from John Lewis, with a 3 day lead time for delivery.
Its the only way to stem the tide of upper middle class public school stabbings.

Best bet is to ask if you can test drive each one.
Any decent knife-seller (maybe not John Lewis, but you never know) will have some innocent vegetable and a chopping board you can try em out with. If you spending a reasonable amount on a knife, the sharpness will be much of a muchness, and it is more about how comfortable it is to chop with - based on the handle and the curve of edge. If it matches your wrist action and the handle doesn't dig in anywhere uncomfortable, then you are good to go.
I almost went for some really nice Japanese knives till I had a go on them. They had all dragons on the handles, samurai sword style hard steel edge and soft steel sides, but two chops into a potato & the it just felt wrong.

Well, in traditional me style, the knife plans were scaled back. Three reasons for this.

Firstly, John Lewis basically didn't have a sub £300 block, and have no guarantee that you can actually buy a whole set of knives individually, or guarantees of availability in the near future (and a quick call to Oxford street gave the same problem). Therefore we got a 5 knife block for £75, unbranded, but feel nice to wield, and if they're shit, won't break the bank to replace them again.

Secondly, as I walked in I also decided to upgrade my remaining pans to Anolon professionals, and also get a Saute pan, which has been missing from my life for so long.

Finally, while I could have waited for the knife set issues were resolved, I needed the vouchers spent on Me stuff now, because I'm going to have to buy something else from there by July

Also, I have one of those pushchairs infant transport solutions, plus the car docks and seats and other accessories. The whole lot set me back around £900, but they're worth it.
Announcing it in a thread on knife recommendations is a little creepy.

I recently went knife shopping whilst killing time in Cardiff. I started looking at the Anolons but I don't like them much -- I prefer a little more weight in the handle and I don't care for the soft touch stuff they are covered with. The (very helpful) staff let me open and handle a few others and I settled on a Robert Welch signature edition 7" cook's knife (plus an Ozitech sharpener). So far, it's excellent. Good balance, sharp (obviously) and the more-than-usual curvature of the blade allows you to do the rocking thing for mincing herbs or garlic.
