I'm happy to leave the tomato sauce out on the bench or in the cupboard (after all, that's what they do in cafes innit) but Lady T prefers it in the fridge. So, it tends to be kept in the fridge.

For chips, there are many wondrous accompaniments, some of the classics like gravy, tomato ketchup, so much vinegar it stings. New(ish) to me is garlic aioli, lovely to dip chips into.

I used Google Translate to send emails to an Italian lawyer*. When we met he was surprised to find out I wasn't Italian.

I suspect it's not as good for non-european languages, though.

In my case, I'd have to buy an entire dedicated fridge for condiments, and I simply don't have the room unless I give up the beer fridge.

So manufacturer's instructions on honey = ignorable, manufacturer's instructions on ketchup = mandatory? Why the distinction?

You make a good point, we have a "US Style" fridge. I went for the one with the most storage space, also didn't go for the ice cube maker.

Its never close to full, so I guess the space is part of the reason we stick every sauce in the there because we can so to speak

You have a dedicated fridge for beer?

Also last night I fancied some Franks Hot Sauce on a bit of steak we were having, the best before on the large bottle we have in the Fridge is 2014! I still used it and it was very nice! Would not eat out of date Mayo though.

Why the distinction? Well, in the case of syrup, it's a fact that this is a super-saturated sugar solution; it's a fact that nothing on Earth can live in it, so much so that it can be used to sterilise wounds, as I've said previously. So I guess, that's good enough for me; the worst that's going to happen is that sugar might start crystallizing out, but that's never going to do me any harm. Because science.

Conversely, in the case of mayonnaise, it's a fact that this can - and does - spoil; bacteria is more than happy to thrive and multiply in it, if the conditions are right. (In fact, mayonnaise is frequently linked as a cause of food poisoning IIRC; raw eggs and fat can certainly get rancid). Like I said, I've seen it with my own eyes, having been handed a whiffy, encrusted, unrefrigerated jar of Hellman's before now, and it turned my stomach then, just as it does now. Call me a ponce by all means, but it's not for me, basically.

I saw some news article or other on Granada Reports (or similar) a couple of years back, where people were complaining that Sainsbury's tomato ketchup bottles were exploding in their cupboards. The reason, it was found, was due to less and less additives - potassium sorbate, salt etc. - being added to satisfy ever-increasing market demands for less additives and salt over time, whereupon it became viable for bacterial growth if it wasn't refrigerated, contrary to manufacturer instructions. The 'explosion' was, of course, due to anaerobic bacterial growth - CO2 gas being produced - whose gas pressure built up to such an extent, given the immense scale of microbial growth ( :spew: ), that the actual bottle/vessel suffered catastrophic failure. This wouldn't happen if it was refrigerated and within the use-by date.

So then, call me old fashioned etc., but I don't want to be eating the pre-explosion bacterial soup, and I really don't want to be eating the rotten, raw eggs equivalent in similarly mis-stored mayonnaise. :spew: :spew: :spew:

For me then, it's a no-brainer: I would no more not store an opened jar of mayo in the fridge than I would a pint of opened milk or a packet of sausages. It's perishable food that needs correct handling and storage.

Right. I just want to recap.

I just checked some maple syrup ("refrigerate after opening, use after 4 weeks") and some tomato ketchup "refrigerate after opening, use after 8 weeks."

Your view is:

1) it is safe to ignore the maple syrup warning because you know best
2) it is dangerous to ignore the ketchup warning because the manufacturer knows best
3) 1) and 2) are somehow not incompatible because ¯\_(ツ)_/¯

You can't appeal to authority ("manufacturer knows best") to win one argument ("ketchup belongs in fridge") whilst ignoring the very same authority to win another ("syrups can live in the cupboard.") You can't have it both ways. Either you're a fool to ignore the syrup manufacturer, or other people are not fools for ignoring the ketchup manufacturer.

I wasn't talking about mayonnaise. I was talking about ketchup.

Mate, I'm bored with this now and I'm all mayo'd out. I'm just not prepared to yet again go through what is, at the end of the day, _really simple to understand stuff_, sorry.
Look, don't refrigerate your mayo. Or ketchup. Or anything. Don't listen to the manufacturers. Stick the lot out your front door for the crows for all I care; marvel at the ensuing explosion of fauna. Your Great Condiments Storage Instructions Rebellion holds no further interest to me. I'm done here. :)

Chinny is right to a decent degree in the case of honey: it's the only foodstuff that cannot spoil.

However, that's if it is kept thoroughly clean. A bread crumb on top can still provide a breeding ground for bacteria, so anyone who puts knife to honey, then to bread, then back j. The honey jar has j troduced contaminants and the gateway for it to spoil.

Also, as manufacturers move from glass jars to plastic squeezy things the plastic degrades far quicker and can lead to a shorter shelf life for the product due to taint.

D'oh. Sorry. In my weak defence, Darwin cut his firstctoothblasf night, and we've all had no sleep and the 'flu, and your names both begin with a C.

I meant Cavey. Sorry.
