At the restaurant I work at we mince our own meat for the burgers. It takes forever to mince about 20kg of beef.

fun fact: Lean meat in general should be used when using a slow cooker, fat does not soak in and nothing evaporates in a slow cooker so all using full fat meat will earn you is a nice layer of scum.

When I make lamb curry I use a spoon to remove the layer of fat at the top, or apparently putting in an ice cube is good because the fat gravitates to it and it's then easy to lift out.

The old time recipes from the cajun dudes say to do this. Seriously. Otherwise the fatty scum just makes it taste oily and horrid.

I agree that fat can be tasty (see: steaks, bacon, belly pork etc), but an oil slick on a gumbo ain't good eatin'.

In the same way that salads aren't always bad, fat isn't always good.
