1 week trial bottle suggests it is pretty fuxking strong but a but dull tasting. More hops needed and possibly a touch of crystal and black malt. But I might just use whatever I have in with the 3kg of pilsner malt I have kicking about

A different bottle and it's getting better for both. I suspect aging is the next big thing to look at.

I do my homebrewing on top of the stove as it produces the sort of volumes that are manageable and I don't do it enough to justify pricey stuff. On Friday, I set going a single Saaz hopped Paterbräu style beer using 50% pale malt and 50% Bavarian Pilsner (2.1kg total). Here's how:

The 2.1kg grain went into 6 litres of water to make a mash at 68 celcius, but my new style insulation wasn't super, so it came out at 62 after an hour (when wrapped with towels it comes out at 65. No biggies, ask later). The wort (liquid) is strained through a muslin cloth from mash tun into a big tub and grain added back into the tun.

I added 6 litres more water (at 80 degrees) into the tun, stuck a lid on it and left for 10 minutes before straining it all through muslin again. The wort was poured back into the tun and boiled for an hour, adding 50g Saaz hops at the start of the boil (when it passes 100). 10 minutes from the end of the hour I added 50g Saaz hops, and my heat exchanger (watch out for any residual water coming out the ends as it warms) to the tun. 5 minutes from the end, I added a pinch Irish Moss.

The pot came off the hob, and I put it in the sink filled with cold water. I connected up the heat exhanger to run cold water through the copper pipes and after 20 minutes it was removed as wort is cool enough.

The FV is sterilised with the baby tablets and wort is strained through a sterilised sieve to catch bits and bobs. OG was taken, it was 1054, so I diluted it down to 1.044 with cold water (conveniently this made it 2 gallons), pitched the yeast, put the top on and in the cupboard it goes.

I use the same 15l pot for mash and boil.

Final gravity was 1004 which is 5.4%. Didn't expect it to go that far.

Picked some Damsons last night on the way home so will be doing a batch of Damson Gin. Find that there is more juice in these as they are bigger than sloes so its a nicer drink

Also have enough Quinces to do a batch of Quince Vodka.

Slightly off the topic of homebrew but still on beer I found this online

A beer dispenser that you can buy kegs for, looks like a great idea until you break the prices down.

Best part of £200 for the dispenser, then £30-35 for 6 litre kegs, that's costing around £3 a pint so a bit pricy

Also I'm not a big fan of strong EU lagers and most of the kegs you can buy are those

Shame as I like the idea of it!

I made blackcurrant gin last year, without any added sugar (unlike sloe gin). It was delicious, a really refreshing drink with tonic.

Homebrew night was superb. Everyone was really enthusiastic and had brought things to sample. I learnt a lot (put bag of marbles in hop bag to stop it floating, use cafetierre to make a hop tea). Will go again. Clashed with netrunner. Ended up shitfaced

Doing a SMaSH to night. "what is a SMaSH,. MaliA you are thing?" Asks no body E we, but I tell them anyway. A SMaSH is a Single Malt Single Hop beer. It is dead simple to do and stuff like that. I will use new hop method, too!

Ingredients! 2kg Maris Otter malt, 50g Chinook hops, US-05 yeast .

Going to mash malt in 7 litres 65 degree water, and sparge with 6. Add 30g hops to cafetierre in 80 degree water and leave whilst wort boils. Pour in hops and set it up again. Pour in remainder 55 mins after boiling. Chill, then pitch yeast. Ferment, bottle then drink.

The result last night was 10 litres of all grain single hopped Chinook beer which should end up between 4-4.5℅ and 20 litres of the kit Hoppy Copper which should be 4℅.

To make it a bit more Hoppy smelling, I made a hop tea so we will see how that goes.

It has come out at 4.9℅. But not a lot of aroma, though.

On the left is the batch primed kit with the hop tea added to it. On the right, the all grain smash. The smash tastes a bit green still, but seems to be conditioning ok but hasn't carbonated.. The kit with the hop tea still isn't that aromatic, so next is to dry hop. Oh, and, um, a slug crawled up the spigot of the keg. I popped it out and cleanwd it with a baby wipe. Seems ok

Busy night so far... Dry hopped with First Gold a Golden Ale kit from Wilko. And set off an amber ale (400g munich caramalt 1, 2kg maris otter, 50g pilgrim hops at start of boil, 50g dry hopping).

Dry hopping is when i broke my cafetierre and want to go to bed so just pour the hops on to the top of the wort rather than make a hop tea.
