Yup, extend working day to 13 hrs = better progress! Enforced rest day today though as looking after small wiggly human tonight while Mrs w at knitting club.

Will this place mostly be to serve customers in the daytime or evening?

If the former then white as it will increase the brightness of the place and bring more sunshine in making those windows look bigger. If evening/night then red as the light from the window won’t be bringingin light and so it will seems cosier and draw attention towards your decor.
