Presenting at large conferences is exciting - go you :)

Also also: we had simultaneous translation. I speak English and somehow [1] my audience listens in Japanese. It makes you feel like a fucking wizard [2].

[1] highly skilled and hard working translators
[2] the translators are the actual wizards

Help me out of my ignorance here - how are proper nouns written in pictorial alphabets like Kanji? As I understand it, individual pictograms are meaning-based, not phoneme-based, so unlike the English alphabet you can't just decide how a name is written based on the sound of it spoken. Does that mean a proper noun has to have a meaning in order for it to be written in a language like Kanji?

You wouldn't. You'd use Kana which are entirely phonetic.

But as with english, not all sounds are possible in Japanese. (Indeed, pretty much anything that isn't immediately followed by a vowel isn't valid, although the degree to which they're audible does vary)

You just do. Pretty much every japanese sentence has hiragana in it, given they are rather the glue that holds things together. Katakana are typically used for foreign words, but do have other uses.

To break down the.. stuff above into the individual word type things.

すべて - subete (all hiragana, translation: everything. But could be written as 全て which is a kanji/hiragana mix. Although it never is.)
が ga (hiragana particle, signifies that everything is the subject of the sentence)
大きい ookii (kanji/hiragana mix. the frst two characters are kanji meaning big/large. the last is a hiragana end, which can alter depending on grammatical context, and is found at the end of one set of adjectives)
しかし shikashi (all hiragana, means however)
小さい chiisai (kanji/hiragana mix. Means small. See comments on large.)
。Punctuation. End of sentence.
コンピュータ konpyuuta . (Katakana. pretty much computer taken as directly into japanese as you can)
が ga (Same particle as above)
ある aru ( verb, to exist.)

So all three common systems in two sentences, all intermixed. Any construct in kanji can be substituted for its hiragana form (or less typically the katakana form,) although this will often obscure the meaning due to less clarity about the specific term meant. (should be noted that kanji can have different readings depending on the word. e.g. 小さい = chii.sa.i 小説 = shou.setsu)
