Are you doing prime rib of beef? Based on what's just come off my smoker, I recommend prime rib of beef.

Also wings and pork shoulder, duh, but the beef has significantly outshone those and the wings are the best I've done and I do great wings (the worst I've done have made people decide they should come here instead of going to Reds)

It was about 300F for 2 hours, then cooled to 275 for another 2 or 3, and I Texas cheated it for at least 2 hours of it (it was one rib, bone out).

My smoker isn't controllable at all, beyond "add/don't add coal", and I was a bit distracted by mowing the lawn and going next door for a cuppa.

Cheap smoker with no adjustable intake or exhaust that is so well-used the metal is distorted creating air gaps around the lid. I should get some fire cord to block it up really, but I'm due an upgrade anyway.

Always viewed that as pretty cheap and nasty cheese? Is there some culinary tip I'm missing here? :)

Morrison's do BBQ Burger Slice (or something), which is their fantastic crappy cheesy (can't call it cheese) slice but thicker. It's amazing stuff.

Gruyere is my favourite cheese on or in burgers, but burger cheese is a close second. Not Dairylea, though. It's too pale and not as melty. You need that kind of orange-tinged sluce sold under a supermarket own brand label.

Oh, I didn't know that. Must have just been super-cold fridge sliced when I tried it. It has a different taste too. More creamy, less taste. Less fake cheesiness.

We guarantee that we've carefully removed all the malevolence before cooking.

The tongue is getting 36 hours in a water bath at somewhere around 68C, then the skin gets removed, then it goes on the smoker for a couple of hours.
