Cor, I love tofu and I think I’ve actuslly perfected cooking it. I’d like to get a nice tofu press one day to drain it, but at the moment I use baby muslins. A friend has started buying me smoked tofu from Waitrose, though, and it’s so good that I just stand there and eat every piece out of the pan with no other accompaniment or seasoning.

Apparently pouring hot water over it helps with getting the moisture out, possibly counterintuitively. Corn flour makes a nice coating when frying it - I'm going to experiment with some spices in the coating, but I've read that it's best to just add taste via the sauce/whatever of the dish it's added to, rather than directly through coating or marinating- what would be your view? Also any tips generally on making it extra awesome.

I have never tried the hot water idea, but I will give it a go.

My preference is for firm tofu pressed as much as possible, then I slice it thin and cut it into squares or triangles of about 4cm. I pop this in a freezer bag with soy sauce, garlic, a bit of ginger, chilli and some five spice and then trap s liad if air in the bag like a balloon and shake it all about. I tgen put a tiny amount of oil in a hot pan and fry until the soy has caramelised to make it crispy and firm. I’ve tried with cornflour and various spices, which has been nice, but wouldn’t be my go-to. Sesame is nice with tofu, too.

You don’t have to, but I find it really helps stop it turning into tofu scramble and also helps draw all of that flavour in. It’s sleays personal preference, but I definitely always press it otherwise it stays too slippery inside for me and I like the resistance when you bite into it.

I pop it on that cooling rack to rest if I’m not eating it immediately, to have with salads and whatnot.

sorry, that was how I read it - it wasn't immediately obvious it was a useability complaint but even if it was (c) below.

That’s a very good question indeed. Maybe he ‘heard voices’ that told him that tax collectors were bad, etc. at the appropriate moments.

And, to take your point further, although there were no toasters in those days, did he have pre-knowledge that they would be invented in the distant future?

Personally, I think Brian Cox (for example) is just making shit up as he goes along. He’s a nice enough chap, but I watched the end of that programme about the Science of Dr. Who this week, and his explanation of event horizons was totally unfathomable. Or maybe I just reached the limit of my intelligence, once again, like I did when we started on integral calculus when I was supposed to be studying A level maths.

I think it must be a)amazing and b) terrible, to understand that stuff. I sometimes wish I knew everything, but I’m also glad that I don’t.
