The obvious answer is that I wouldn't butter one, but *if* I'd taken leave of my senses and decided to do it then I'd do the underside as it has a slightly larger and well defined area. That makes it easier to get a nice even covering right up the edge. |

If your going to butter it, you butter the rough side. Then you add another biscuit, with the rough bits meeting. And you hold the smooth bits. But I wouldn't butter them. However hovis crackers have a similar design, and I love spreading dairylea on them. |
